Apple Glazed Chicken Breast Recipe
One thing I’ve come to know about myself is that I love apples and apple flavored anything. So when I was perusing my The Taste of Home Cookbook and found a recipe for apple-glazed pork chops, I had to try it (pg. A19 under 30 Minute LIght Entrees)! Since Nicolas and I are not big on pork (we do eat it, we just prefer chicken), I opted to try the recipe on chicken instead. And boy is it delicious! This recipe’s rub will cover two or three chicken breasts depending on size.
Recipe:
2 tbs of brown sugar
1 tsp of paprika
1 tsp of garlic powder
1 tsp of ground mustard
1 tsp of dried thyme
1 tsp of onion powder
1 tsp of salt
1/2 tsp of pepper
Apple Jelly
Raw Chicken (2 breasts)
- Preheat the to 350°.
- Mix all of the seasonings together.
- Rub the seasonings all over the chicken breast (the more the merrier!).
- Place chicken on a baking sheet (or anything you can cook in the oven) and cook until done. It should cook for about 25 minutes, give or take.
- When the chicken is thoroughly cooked, remove from the oven. Melt 3 tablespoons (or more) of apple jelly in the microwave, then glaze the chicken breast.
That’s it! It’s a very simple recipe, and it’s DELICIOUS!!! I’ve cooked it twice now, and I can’t get enough! I love that this recipe is versatile in what I can add as a side, such as rice, broccoli, potatoes, etc. You can throw this chicken on top of fresh salad greens. It’s honestly fantastic without any sides. I could just eat the chicken as my meal. But thanks to a dessert recipe I tried for Thanksgiving using apple jelly, I was willing to try this recipe and LOVED it!
